Banana crumb muffins

 Asalamualaikum dan salam jumaat penghulu segala hari....pagi hari ni kak rose nak entrykan muffin yang buat semalam lagi...bila ada pisang yg over ripe dan x nak membazir, mula la pk nak wat apa kan... godek2 dapat resepi mudah ni, so terus la memulakan projek dengan membaking... resepi dari sini.

turn out very nice n moist sangat. harum bau cinnamon masa membaking muffin ni mmg sangat tempting, so bila kuor dari oben terus ngap masa hangat suam tu... lembut sangat. tp may be next time kena kurangkan taburan crumb kat topping dia tu.... a bit sweet for me, wpun dah kurangkan sukatan gula dalam adunan doh tu...

For The Topping: 
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter
Make the topping: In a small bowl, stir together brown sugar, flour and cinnamon.
Use a fork to cut in 1 tablespoon butter until mixture resembles coarse crumbs. Place in refrigerator until ready to use.

For The Muffins: 
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas, mashed
  • 3/4 cup white sugar (kak rose kurangkan 2 sudu besar)
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla
  • 1/3 cup butter, melted (kak rose guna 1/2 cup)
Preheat oven to 375 degrees F. Line a muffin tin with 12 paper muffin cups*.

Make the muffins: In large bowl, mix the mashed bananas with the sugar, egg, vanilla and melted butter. Stir in the flour, baking soda, baking powder and salt until just combined. 
Use an ice cream scoop to evenly disperse the batter into prepared muffin cups.
Sprinkle crumb topping over muffins.
Bake in preheated oven for 17-19 minutes or until a toothpick inserted into center of a muffin comes out clean. (kak rose bake 15 minits jer)
*Makes 12-14 muffins. (dapat ngam2 12 muffin size besar ni....ada banyak ni, sapa nak angkat keybord ya!)
